Grade 304 stainless steel contains 18 percent chromium and 8 percent nickel, giving it excellent corrosion resistance in commercial kitchen environments where the equipment is regularly exposed to moisture, cleaning chemicals, and acidic food products. Grade 201 is a lower-cost alternative with less nickel content. It looks similar to 304 initially but is significantly less resistant to corrosion and will show rust and pitting more quickly in commercial kitchen conditions. Always specify 304 stainless steel in your purchase order and verify this with a material certificate.

Thickness and Build Quality

Table and bench tops should be a minimum of 1.2mm steel thickness for light commercial use and 1.5mm for heavy-duty kitchen environments. Thinner steel flexes under load and is less hygienic because it is harder to keep clean. Check the welds on any sample unit. Clean, consistent welds without sharp edges or gaps are a sign of good manufacturing practice.
